Baked dishes are simple to make in the morning, and they tend to make my family happy! This recipe for Cinnamon Clove Baked Oatmeal has a warmth and sweetness that is sure to start the day off right.
Cinnamon Clove Baked Oatmeal
Pre-heat the oven to 350 degrees Fahrenheit. Place parchment paper in a 9 X 13 inch pan to prevent the oatmeal from sticking to the pan while it bakes
In a large bowl, whisk the brown sugar, oil and eggs until it is smooth. Stir in the oatmeal and the flour.
Chop the raisins, and ground the cloves. Add the raisins, cashews, shredded coconut, cinnamon, cloves, baking soda, and a dash of salt to the bowl. Mix well.
Using a large mixing spoon, spread the mixture into the pan. Smooth the mixture down into the pan with the back of the spoon.
Bake until the edges turn a light golden brown and the middle is no longer sticky, around 20-25 minutes. Use a fork to test out the middle before removing it from the oven. If the center is not yet set, keep it in the oven with the heat off until it becomes firm.
Remove the baked oatmeal from the oven, and let it cool for 15 minutes. Take it out of the pan, keeping it on the parchment paper, and allow it to cool on a baker’s rack for another 15 minutes.
Finally, drizzle a honey glaze on the top. Make the glaze in a sauce pan with 1/4 cup of honey and 2 tablespoons of butter. Stir while heating until melted and fully combined. Drizzle over the baked oats using the back of a mixing spoon or pastry brush to spread evenly. Let it rest for another 5-10 minutes.
Serve, and enjoy! Cover for two weeks, or freeze for up to six months.
