St. Patrick’s Day Leprechaun Hat Marshmallow Pops combine Cookies & Cream Pocky, Ritz Crackers, Rainbow Airheads, and green candy melts for a fun treat! They’re sort of like leprechaun hat s’mores!
My daughters had a lot of fun assembling these with me. However, the difficulty level would be medium because of some breakable ingredients. If you do prepare them with children, make sure to leave room for trial and error, and have fun with the process of making these marshmallow desserts!
Prepare the Materials
Take a skewer, and create Pocky-sized holes into the Ritz crackers and the marshmallows. The Pocky is bigger than the skewer, so you will need to wiggle the skewer around to make the hole larger.
To make a hole in the Ritz crackers, it should go all the way through. However, the marshmallows do not need a hole that goes through the top, only partially though them.
Next, use kitchen scissors to trim the Rainbow Airheads to a size that will fit around the marshmallow. Set them aside in a small bowl.
Microwave the candy melts at 60 second intervals. Stir well, and remove.
Assembling the St. Patrick’s Day Marshmallow Pops
Slowly and carefully, pull the Ritz cracker onto the Pocky. Add the marshmallow on top. You can use cake pop sticks if you prefer.
Use the end of a skewer to add a bit of chocolate between the marshmallow and Ritz cracker to help them stick together. Allow the chocolate to dry.
Carefully so as not to break the Pocky, roll the Ritz cracker and marshmallow in the green candy melts. Use the skewer to wipe off any drips or to make it look more smooth.
With the green candy melt layer still wet, add the rainbow Airheads around the bottom of the marshmallow. Place festive sprinkles on the top top.
To avoid smudges while this dries, you can use a cake pop drying stand. Placing them on parchment paper will flatten the back of them.
Allow these delicious desserts to dry for around 10-15 minutes. Serve your St. Patricks Day marshmallow leprechaun hats, and enjoy!
