Air Fryer Cannolis

Air fryer cannolis are simple twist on a classic cannoli recipe. They are easy to make with an air fryer and wonton wrappers! The incredible cannoli filling is flavored with cinnamon, allspice, and nutmeg.

Although a homemade, traditional cannoli shell recipe can be spectacular, using wonton wraps in the air fryer is much simpler than rolling out the dough, and it makes barely any mess since you don’t have to fry with oil.

Kitchen Supplies

You will need an air fryer, cannoli tubes, tongs, pastry bag, and a stand mixer.

Cannoli Filling

To make cannoli filling, you need to make sure your stand mixer and whipping cream are both COLD. Refrigerate the stand mixer bowl for 15-30 minutes, and keep the whipping cream in the refrigerator until you are ready to work on the recipe.

Pour the whipping cream into the chilled stand mixer bowl. Mix on medium with the whisk attachment until you see stiff peaks forming. It will thicken slightly, but stop mixing before it becomes hard. This may take 2-3 minutes.

Drain the ricotta using a strainer, pressing it down with a paper towel to remove the liquid. Having the right consistency matters when you begin to fill the cannolis, so this step is important not to skip.

Add the ricotta to the stand mixer along with the powdered sugar, vanilla extract, cinnamon, nutmeg, and allspice. Also, add in 1/2 bar of chopped dark chocolate. The chocolate you use for the filling should be chopped very thin.

Using the stand mixer, stir until everything is well combined. Half-way through, use a spatula to scrape the edges.

Place the cannoli filling in the refrigerator for at least 2 hours.

Air Fryer Cannoli Shells

While the cannoli filling chills, make the cannoli shells using an air fryer.

Spray the basket with Pam cooking spray, and preheat to 400.  As it preheats, prepare the wonton wraps.

First, spray the cannoli tubes with a bit of Pam cooking spray to make sure the shells won’t stick to them.

Next, lay each wonton wrap flat in a diamond shape. Place the cannoli tube on top. Fold the two edges on top of each other. Using a pastry brush, dab water where it overlaps to hold it in place.

Place the cannoli shells into the air fryer. Spray the top with Pam cooking spray. Time the air fryer for 3-5 minutes per side. Carefully, use a tong to flip them. Add more Pam cooking spray to the other size.

They will be a light golden color throughout when they are done.

Assembling the Cannolis

To assemble the cannolis, take out a pastry bag. Use a spoon to scoop in the cannoli filling, and cut the tip off.

Use the pastry bag to fill the cannoli shells with the filling when you are ready to serve them. Do not prepare more than 10-15 minutes ahead of time.

Top with chopped chocolate. I prefer to use thickly chopped chocolate. My family likes the shells dipped in melted chocolate for an even richer flavor.

Dust with powdered sugar. Serve, and enjoy!
