Berries and Cream Heart-Shaped Watermelon Pizza

In this recipe, I am going to share how to make your own whipped cream, but if you want to try an easier version, you can use a container of whipped cream at the store instead. My children have fun making whipped cream with me and seeing it form in the mixer!

Homemade Whipped Cream

For the homemade whipped cream, put the bowl of a stand mixer into the refrigerator for 15-30 minutes. It needs to be very COLD for the recipe to turn out right.

The same goes for your whipping cream. Although some recipes call for room temperature ingredients, this is not the case here! Make sure your whipping cream is very cold before using it.

Now, add the whipping cream, powdered sugar, and vanilla extract to the chilled bowl of the stand mixer. Use a wire whisk attachment, and beat for 60-90 seconds. Half way through beating, scrape it off the edges to make sure all the ingredients are being mixed well.

Do not stop beating until stiff peaks appear. If you take it off the mixer too early, the whipped cream will have too much of a liquid consistency, and it won’t stay on the watermelon. You have to keep an eye on it, and take the mixing bowl off the mixer as soon as it has the consistency of whipped cream. If you let it mix for too long, it becomes too thick and hard.

Assembling the Watermelon Pizza

Next, prepare to make the rest of the recipe. You can leave the whipping cream out if your preparations will go quickly, or move it to the refrigerator to stay chilled.

Slice an entire watermelon into 1-inch rounds. Cut out heart shapes to create an equal amount of large and small watermelon pieces.

To assemble, the larger heart-shaped watermelon pieces will go on the bottom. Then, spread the whipped cream on top of the first watermelon layer. Place the smaller heart-shaped watermelon piece in the middle. Add blueberries on the outer edges where the two pieces of watermelon do not overlap.
