Butternut squash is a classic staple for fall meal planning! Preparing a recipe with this garden-fresh ingredient for the whole family is simple. Your children will enjoy the sweet and savory deliciousness!

Butternut Squash Stuffed with Granola, Blueberries, and Maple Syrup

This year, my children were proud to grow their first butternut squash in our garden! I came up with this recipe for butternut squash stuffed with granola, blueberries, and maple syrup to show them how incredibly delicious of a vegetable they grew. They gave a fantastic review of this dish, saying it was the best squash I’ve ever served.

It’s also incredibly easy to make on a busy night because most of the work is just letting it bake for a long enough time. Butternut squash is a great meal-maker because it’s healthy and filling. I served this dish with a side of chicken breast sautéed in butter and herbs. With all the nutrients and vitamins, my family felt great after eating dinner.

To prepare butternut squash, you carefully use a sharp, serrated knife to cut the butternut squash in half. Scoop out the seeds, and dispose of them. Spread 1/4 cup of melted butter over the squash, and add a dash of sea salt, cinnamon, and all spice. Bake at 400 for 1.5 hours or until is is soft throughout, leaving the sliced side up while it bakes.

Then, pour 2 cups of granola into a bowl. My children liked the flavor of Quaker Protein Granola made with oats, chocolate, and almonds, but any kind of granola you have will work. Add 1/2 cup of maple syrup, 1/2 cup of water, and 1/4 cup of frozen blueberries, and mix with a large spoon.

Take the granola mixture, and spread it over the top of the butternut squash. Bake for another 15 – 20 minutes. Serve, and enjoy!

Roasted with Butter, Brown Sugar, and Cinnamon

One of the most simple ways to serve butternut squash is roasted with butter, brown sugar, and cinnamon. Spread 1/4 cup of melted butter over the sliced squash. Add 1/4 cup of brown sugar, and top with cinnamon. Leave the sliced side of the squash up while baking it at 400 for 1.5 hours or until is is soft throughout. Let cool, and scoop it out to serve.
